Can’t. Get. Enough. AVOCADO! Like so many people (go the avocado-led food and health revolution!) I just love them so so much, they’re such a fantastic food! You can just feel how good for you they are when you eat them. I think I’m going to say that about a lot, but it’s so true, and so important, for me, avocados are up there in those stakes
they’re powerful good!
Avocado dips are a beautiful food to eat, smooth, creamy, tasty, zingy, alkaline-forming, and so nurturing and anti-inflammatory. Children love avocado’s, and what better food to feed them? They are packed with vitamins, potassium, good fats and fatty acids, fiber, and proven to lower cholesterol. And they’re called alligator pears.
This avocado dip is super simple and easy, just avocado, lemon juice, garlic and salt, I’m mad on it. I never get bored of eating it. You can eat it with root vegetable chips, as a sandwich spread, with refried beans in a wrap, or with flatbread, olives and crudités as a mini meze-esque light meal. I like it best with carrot sticks.
When I was first looking to eat a highly alkaline diet and lowering my carbs (I do this because the more carbs I eat the worse my pain is), avocado dip and crudities were an especially important snack, as something I could turn to to nurture myself and, well, have something to eat, and still are. I eat this nearly everyday, apart from simply eating avocados with raw cider vinegar and salt, which I like a lot too, it’s my favourite way of eating them, in fact I think I like it best. It’s so fresh, so packed with goodness and taste and makes you feel so good. And you can eat as much as you want, there’s no reason not to, it’s so good for you. So what if avocado’s are calorific, it’s all good(ness) ♥
- 1 ripe medium/large avocado pear
- 1 medium garlic clove
- 1 tsp sea salt, to taste
- 4 tbsp lemon juice
- dash of carton coconut milk/ dairy free milk of choice
Scoop out the avocado fruit, making sure to get the dark green parts by the skin as these are the most nutritious. Blend all the ingredients. Taste and adjust seasoning if needed, I love it super strong and zingy!
I like this dip quite salty but do make it to your taste and needs.
You could add black pepper, fresh coriander, basil or lime juice instead of the lemon, swap garlic for spring onion or chives, go for it! But right now, I just love this simple dip, it hits the spot every time ♥
